The easy answer is Nope. Those Operating Systems are usually hard wired into the MP3 players.
If you were willing to experiment and were really good with electronics and were not scared of voiding your warrant or breaking the product then maybe. Depending on the MP3 player, you might be able to put a scaled down version of Linux on it. But it would be super hard and you would have to know what you were doing.
